While the science behind that claim is in question, they argue that eating &lt;b&gt;50 grams&lt;/b&gt; of processed meat per day, about &lt;b&gt;the size of a hot dog&lt;/b&gt;, increases your risk of colorectal cancer by &lt;b&gt;21%&lt;/b&gt;. This preservative itself is harmless and in fact beneficial, but there is concern that it will combine with amino acids in the stomach to form &lt;b&gt;nitrosamines&lt;/b&gt;, which have been shown to cause cancer in lab animals. This is because the body is an amazing machine that handles nitrites very well. Here is what happens to the nitrites when you eat a hot dog:&lt;/div&gt;&lt;div&gt;&lt;ul&gt;&lt;li&gt;When eating, the body acts to keep nitrites and amino acids separate to prevent nitrosamine formation&lt;/li&gt;&lt;li&gt;The &lt;b&gt;pH level&lt;/b&gt; of the stomach rises when eating, to the point that nitrosamines can't form&lt;/li&gt;&lt;li&gt;Nitrite is rapidly converted to nitric oxide, which aids in &lt;b&gt;healing burns&lt;/b&gt; and &lt;b&gt;controlling blood pressure&lt;/b&gt;, too quickly for nitrosamines to form&lt;/li&gt;&lt;/ul&gt;&lt;/div&gt;&lt;div&gt;Nitrites are also produced naturally by the body, since they are an essential part of the &lt;b&gt;immune system&lt;/b&gt;, effective at fighting bacterial diseases. So what's wrong with telling the USDA to stop selling them to schools?&lt;div&gt;With the exception of &lt;b&gt;turkey&lt;/b&gt; and &lt;b&gt;ham&lt;/b&gt;, the USDA does not provide processed meat to public schools&lt;/div&gt;&lt;div&gt;&lt;ul&gt;&lt;li&gt;Processed meat is typically provided by &lt;b&gt;local vendors&lt;/b&gt;&lt;/li&gt;&lt;li&gt;Protein is necessary to a child's diet, and they are more willing to eat hot dogs than other sources of protein&lt;/li&gt;&lt;li&gt;Processed meats are the most economical way to provide protein to large groups of children&lt;/li&gt;&lt;li&gt;Real meat as a substitute to processed meat is not only more expensive, it brings &lt;b&gt;raw meat&lt;/b&gt; into school kitchens, greatly increasing the risk of spreading &lt;b&gt;food-borne illness&lt;/b&gt;&lt;/li&gt;&lt;li&gt;An occasional hot dog is not unhealthy&lt;/li&gt;&lt;li&gt;Parents often provide the same processed meat to their children at home because it is a quick, easy, and &lt;b&gt;cost-effective&lt;/b&gt; way to include protein in their diet&lt;/li&gt;&lt;li&gt;Banning hot dogs from school lunch doesn't prevent parents from sending their kids to school with bologna&lt;/li&gt;&lt;/ul&gt;&lt;/div&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://www.cretafarms.com/retail/products/images/bologna.jpg"&gt;&lt;img style="float:left; margin:0 10px 10px 0;cursor:pointer; cursor:hand;width: 350px; height: 290px;" src="http://www.cretafarms.com/retail/products/images/bologna.jpg" border="0" alt="" /&gt;&lt;/a&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;A balanced diet is important, and traditions learned as children often carry into adulthood. Of course. Should the government step in to protect your children from killer hot dogs? Not at all. If you are worried about what your kids are eating at school, you can either send food with them or get together with other parents and petition your school district to change its lunch menu. &lt;b&gt;Educate your children&lt;/b&gt; on proper nutrition, not by lecturing, but by your example. A balanced diet at home will be a more lasting influence on your children than what they eat at school. After all, there are plenty of jokes about cafeteria "mystery meat", but &lt;b&gt;mom's home cooking can be legendary&lt;/b&gt;, and passed down through the generations. Of all the dangers your children will face in their lifetime, hot dogs should be the least of your worries.&lt;br /&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Think you're no good at cooking?
